I do daily 10% water changes.. Its the best way to make sure my ph doesn't fluctuate. For fry, I would do the same too. However, if you have a big tank.. such as a 55+, I would do 10% water changes every 3 days.

I do 40% once a week and I clean the tank (take everything out and vacuum) every two weeks.
If you are having water problems I would do daily water changes 20%. Putting them in a bucket is bad, they have no filter, no heater, so I would put them back in the tank. Add some salt to detoxify the nitrites (1tsp per 5 gallons). Did you rinse your filter media in tap water? You should gently rinse it in tank water. Do you clean the gravel with a vacuum? If not you need to. The food and poop goes in the gravel and needs to be cleaned. How often do you clean your tank? We need to figure out why it crashed.
